Welcome to PreGel's International Training Centers, world-class training facilities dedicated to blending your passion with our education. From theory to application to artistry, the PreGel International Training Centers offer an unparalleled educational experience focused on building a culinary and business foundation in authentic Italian gelato, sorbetto, semifreddo, frozen yogurt, pastries, confections and beyond. PreGel America currently operates three locations in the U.S. – Charlotte, NC, Los Angeles, CA, and Ft. Lauderdale, FL, servicing both the East and West Coast.
When PreGel opened our North American office in 2002, our President and CEO Marco Casol immediately recognized the fundamental need to include training as an integral part of our company's service. As he traveled across the country, he became very aware that the American market had limited exposure to authentic, artisanal Italian desserts. The need for education was immense and it quickly became PreGel AMERICA's legacy to not only provide the highest quality ingredients to the U.S. market, but to also educate the American public.
From there, the first PreGel International Training Center was born in Charlotte, NC, and since its inception has trained thousands of students and the growth to date has been tremendous. In 2008, we relocated our company to a new Charlotte, NC, facility fully-equipped with a new state-of-the-art Training Center to meet the growing needs of our students and prospective students. In 2013 we opened the Los Angeles, CA, location providing easy training access to our West Coast students. The next International Training Center was officially in operation beginning in 2016. Our legacy continues to grow and provide a solid education for students seeking to fulfill their passion.
Our Training Centers
The PreGel International Training Center – Charlotte features three classrooms complete with a full audio and visual experience for lecture purposes, in addition to technical training stations and a full spectrum of gelato batch freezers, Hot and Cold Process machines, pastry ovens and display cases.
The PreGel International Training Center – Los Angeles features one classroom complete with gelato batch freezers, Hot and Cold Process machines, soft serve machines and display cases.
The PreGel International Training Center – Ft. Lauderdale features one classroom complete with gelato batch freezers, Hot and Cold Process machines, soft serve machines and display cases.

At the PreGel International Training Centers, we believe that education is the key to success. Our programs are specifically designed to provide our students with all the tools necessary to be successful in the specialty dessert business. Our students are guaranteed to leave the Center with a wide range of knowledge, confidence and continued support from our school.
Our classes are designed for beginners and experienced students alike who are truly seeking a culinary career in specialty desserts. All of our International Training Centers offer beginner and advanced gelato classes, soft serve classes, frozen novelty classes and various pastry classes. The curriculums for all of our programs include both classroom learning and hands-on instruction. These programs cover theory, business planning, production, business and marketing strategies, creative recipes and decorative ideas, and offer liaisons with equipment companies.
Our gelato classes stress the core concepts of classic Italian desserts produced with our products and give a broad understanding of the business. Our pastry and specialty frozen dessert classes highlight frozen desserts and pastries in many diverse applications. Our soft serve classes cover the many flavors and processes for producing frozen yogurt, and soft serve gelato and sorbetto.
Empowering each of our students to find success is the ultimate goal of the PreGel International Training Centers and that goes well beyond classroom instruction. We believe in supporting our students throughout every stage of their careers. While building the culinary and business foundations for our students starts with our training, we also believe that reinforcements are needed as their endeavors grow.
