Hot Process Pastry Cream

This demonstration shows the steps to create 5-Star Chef Pastry Select Hot Process Pastry Cream. To flavor your Pastry Cream, simply add any 5-Star Chef Pastry Select Compound or Paste to the mixture.

Ingredients

50g (1.8oz) 5-Star Chef Pastry Select Pastry Cream Superior (Hot Process)
100g (3.5oz) sugar
450g (17.6oz) milk
50g (1.75oz) cream

Yields:
178 (4oz) portions per bag
712 (4oz) portions per case

Directions

  • Combine sugar and 5-Star Chef Pastry Select Pastry Cream Superior (Hot Process) powder in a bowl; whisk in cream to dissolve the dry ingredients.
  • Heat milk on the stove.
  • Slowly whisk hot milk into remaining ingredients; transfer mixture back to the pot and return to the stove.
  • Bring to a simmer, stirring constantly; cook for about 1 minute.
  • Remove from heat; transfer to a storage container, cover and refrigerate.
