This demonstration shows the steps to create 5-Star Chef Pastry Select Cold Process Pastry Cream. To flavor your Pastry Cream, simply add any 5-Star Chef Pastry Select Compound or Paste to the mixture.

| 400g (14.1oz) | milk |
| 100g (3.5oz) | heavy cream |
Yields:
66 (4oz) portions per bag
264 (4oz) portions per case
Directions
- Whisk 5-Star Chef Pastry Select Pastry Cream Superior (Cold Process) powder into cold milk until all powder is dissolved and mixture is uniform.
- Allow to set in refrigerator.
- Before use, hand whisk pastry cream to result in a smooth texture.
