Pronto Pannacotta (Cooked Cream)
This demonstration shows the steps to create 5-Star Chef Pastry Select Pronto Pannacotta (Cooked Cream). To flavor your Pannacotta (Cooked Cream), simply add any 5-Star Chef Pastry Select Compound or Paste to the mixture before adding the hot milk.
Ingredients
| 100g (3.5oz) | 5-Star Chef Pastry Select Pronto Pannacotta (Cooked Cream) |
| 300g (10.6oz) | whole milk |
| 300g (10.6oz) | heavy cream |
*Flavor with any of our PreGel Traditional Pastes or PreGel Fortefrutto®. We recommend adding 3 to 5 percent of total ingredient weight.
Yields:
72 (4oz) portions per bag
288 (4oz) portions per case
Directions
- In a pot heat the whole milk to 104°F/40°C.
- Remove from heat; whisk in Pronto Pannacotta (Cooked Cream) powder and then whisk in heavy cream.
- Place in desired cup, place in the refrigerator for about two hours until set.
